I want to put them in areas where menus are not suitable, such as a custom mobile menu.
That is still a menu, so if your theme has a separate menu for mobile, then add the links there using the Appearance > Menu settings.
Usually themes use a normal menu that automatically turns into a mobile friendly menu for small screens.If you post your URL and WP admin settings in a private reply and be as specific as possible as to what you want, then we probably can be more helpful.

Open up the custom fields and make sure to add them to the profile: see image.

To remove a field, click on the red cross.
Default fields cannot be deleted, but you set them to in-active.

That depends on your server but 300 should fine.
That bug is being fixed shortly.

The newly created pages should have the shortcodes in them. That usually happens automatically.
Have a look at UsersWP > General tab > Shortcodes.
Add these shortcodes to the correct page.Let us know how you went. Thanks
